These moist, sweet blondies are such a treat and full of healthy fiber. And if you don’t tell, no one will know they’re made with beans!
1 15oz can organic cannellini beans
1/3 cup organic rolled oats
1/3 cup organic Sucanat (dried cane juice)
1/3 cup creamy peanut butter (only ingredient is peanuts)
¼ cup organic sprouted whole grain flour OR other organic whole grain flour
2 T maple syrup
1 tsp pure vanilla extract
½ tsp baking powder
½ tsp baking soda
½ tsp salt
¼ cup chopped walnuts (organic if you can find)
¼ cup thawed, drained (and chopped into quarters) frozen sweet cherries (organic if you can find)
¼ cup vegan mini or vegan regular chocolate chips
Preheat oven to 350 F. Mix all ingredients in a food processor except for nuts, cherries, and chocolate.
Mix until batter is a smooth consistency, about one minute or so. Fold in nuts, cherries, and chocolate ingredients.
Use a spatula to scrape the sides of a food processor and spread in a parchment-lined 8” X 8” baking dish.
Bake for 25-30 minutes or until a toothpick comes out clean. Cool and cut into squares.
Makes between 8-16 squares depending upon how small you cut them. Enjoy!
